Snickerdoodle Cupcake with cinnamon cream cheese frosting

I absolutely love cinnamon flavored ANYTHING and cinnamon cupcakes take the cake! I adapted a cake recipe to make cupcakes. They were so good!!! I used the cinnamon cream cheese frosting for the cookbook "Kiss My Bundt." Here is the website I got the cupcake recipe from:

The frosting is:
Two sticks if butter softened
Two 8 Oz package cream cheese softened
1 teaspoon vanilla
2 Tablespoons cinnamon
4 Cups powdered sugar

Cream the butter and cream cheese. Add vanilla and cinnamon. Mix in the sugar one cup at a time.

S'mores cupcake!

My Love is not a fan of chocolate cake (except for his Nana's chocolate cake, which I'm not a fan of) so I needed to make a s'mores cupcake without using chocolate cupcakes. So I set out to find a really yummy graham cracker cupcake. I found just that at the website below.

Tip: It is best if you grind the graham crackers fresh. Trust me! :)

Ingredients
1 1/2 cups graham cracker crumbs (about 15 whole crackers ground in processor)
1/2 cup all purpose flour
2 1/2 teaspoons baking powder
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup whole milk
1 Cup milk chocolate chips

Preparation
Preheat oven to 350°F. Line 12 standard muffin cups with paper liners. Whisk graham crumbs, flour, baking powder, and pinch of salt in medium bowl. Beat butter and sugar in large bowl until light and fluffy. Add eggs 1 at a time, beating to blend between additions. Beat in vanilla. Add graham-cracker mixture in 3 additions alternately with milk in 2 additions, beginning and ending with graham-cracker mixture. Add chocolate chips and mix by hand. Divide batter among muffin cups.

Bake cupcakes until tester inserted into center come out clean, about 18-22 minutes. Transfer cupcakes to rack; cool completely. Makes 12 cupcakes.

Addison is growing by leaps and bounds these days! She is SO much fun to be with!!! She constantly makes me laugh and has learned over twenty signs in order to communicate with us. She knows 9 animal signs and about 10-15 food signs. She is starting to make different sounds that you can tell are the beginnings of her words. She sleeps about 10 hours at night and still is taking approvimately two naps a day althoug, on some days, it is just one really long nap. I am guessing she is trying to transition to a one nap a day routine. She ABSOLUTELY LOVES her puzzles and books. You can tell that her brain is working overtime these days.

I am currently still at home, although I have recently accepted a position as an interim Children's Minister for a local church here in Haslet. I am able to work from home right now as I am also doing taxes and trying to keep up with a very vibrant and fast 15 month old. We are enjoying our new church home and getting to know fellow believers.

Jonathan is still with the FAA in Ft. Worth and is loving every minute of it. We are truly feeling very blessed right now and are thoroughly enjoying our baby girl!!!
